Ingredients

  • 4 chicken breasts
  • 2 tablespoons butter
  • 1 cup roasted red peppers, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  2. Melt the butter in a large skillet over medium heat.
  3. Cook the chicken for about 7-8 minutes on each side until golden brown and cooked through.
  4. Set the cooked chicken aside on a plate to keep warm.
  5. Make the sauce by adding roasted red peppers and heavy cream to the same skillet. Stir and bring to a gentle simmer.
  6. Add Parmesan cheese slowly while stirring continuously until smooth.
  7. Combine the chicken with the sauce and heat through for another 2-3 minutes.
  8. Serve warm, garnished with extra Parmesan if desired.

Notes

Avoid overcooking the chicken and let it rest after cooking for better moisture retention.
