A simple yet delicious recipe for juicy roasted chicken thighs with crispy skin, perfect for any dinner table.

Ingredients

  • 8 bone-in, skin-on chicken thighs (excess fat trimmed)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C) to ensure a crispy skin.
  2. Brush both sides of the chicken thighs with olive oil.
  3. Evenly sprinkle both sides of the chicken with oregano, garlic powder, salt, and freshly ground black pepper.
  4. Place chicken thighs, skin side down, on a wire rack set over a sheet pan.
  5. Roast the chicken in the preheated oven for 18 minutes.
  6. Carefully flip the chicken thighs over with tongs, then roast for an additional 20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.

Notes

Trim excess fat from the chicken thighs for a crispier skin. Use a meat thermometer to check doneness and let the chicken rest for 5 minutes after removing from the oven.
