Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 cup white rice
  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 2 cups chicken broth
  • 1 cup nacho cheese sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Season the chicken pieces with garlic powder, onion powder, chili powder, salt, and pepper. Cook the chicken until browned, about 5-7 minutes, ensuring it’s cooked through.
  2. Stir in the white rice, making sure it’s well combined with the chicken and seasonings.
  3. Pour in the chicken broth, Rotel tomatoes, and nacho cheese sauce. Stir well to mix all the ingredients evenly.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Fluff the rice with a fork. If desired, garnish with chopped cilantro before serving.
