Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb sausage, sliced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Cook the sausage in a large pot over medium heat until browned.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced potatoes and pour in the chicken or vegetable broth. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  4. Mash some of the potatoes with a potato masher right in the pot to create a chunky texture.
  5. Pour in the heavy cream and stir well. Season with salt and pepper to taste.
  6. Serve hot in bowls, garnished with chopped chives or parsley.
