A comforting and creamy potato soup that’s perfect for chilly days or family gatherings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Sauté the chopped onion and minced garlic over medium heat until translucent and fragrant, about 3-4 minutes.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let it simmer for about 15 minutes.
  3. Blend the soup using an immersion blender until smooth, or leave some chunks for a heartier texture.
  4. Stir in the milk and shredded cheddar cheese, cooking over low heat until the cheese is melted.
  5. Season to taste with salt and pepper.
  6. Serve in bowls topped with crumbled bacon and chopped green onions.

Notes

Adjust the consistency of the soup by adding more broth or milk as needed. Store leftovers in an airtight container.
