A comforting casserole combining tender chicken and savory stuffing, perfect for busy weeknights.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 box (about 6 oz) stovetop stuffing mix
  • 1 cup chicken broth
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup mixed vegetables
  • Salt and pepper to taste
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, cream of chicken soup, broth, and mixed vegetables in a large mixing bowl.
  3. Prepare the stovetop stuffing mix according to package instructions.
  4. Spread the chicken mixture evenly in the bottom of a greased 9×13-inch baking dish.
  5. Spoon the prepared stuffing over the chicken mixture, then drizzle with melted butter.
  6. Bake for 30 minutes, or until heated through and the stuffing is lightly browned.
  7. Allow to cool for a few minutes before serving.

Notes

This casserole makes great leftovers and can be customized with different proteins or vegetables.
