Easy oven-baked tacos filled with creamy cheese, shredded chicken, and zesty sauce, perfect for busy weeknight dinners or gatherings.

Ingredients

  • 4 ounces cream cheese (softened)
  • 1/2 cup picante sauce or salsa (plus more for serving)
  • 1 teaspoon ground cumin
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon kosher salt
  • 3/4 pound diced or shredded cooked chicken
  • 1 cup shredded colby jack cheese
  • 8 burrito-size flour tortillas
  • 2 tablespoons olive oil
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet.
  2. Combine the softened cream cheese, picante sauce, ground cumin, granulated garlic, and kosher salt in a mixing bowl.
  3. Stir in the shredded chicken and shredded colby jack cheese until well combined.
  4. Spoon an equal amount of the mixture onto each tortilla and roll them up tightly.
  5. Brush both sides of the rolled tacos with olive oil.
  6. Bake for 15-20 minutes, or until golden brown and crisp.
  7. Serve with extra picante sauce and sour cream on the side.

Notes

For the best results, do not overfill the tortillas. Use rotisserie chicken for convenience, and ensure cream cheese is softened for easy mixing.
