A warm and comforting Sicilian chicken soup with tender chicken, savory vegetables, and hearty pasta in a soothing broth.

Ingredients

  • 1 cup shredded chicken
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 1 cup ditalini pasta
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sauté the vegetables in olive oil over medium heat for 5 minutes until softened.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the ditalini pasta and cook according to package instructions, about 8-10 minutes.
  5. Stir in the shredded chicken and season with salt and pepper to taste, then let simmer for 5-10 minutes.
  6. Enjoy hot, garnished with fresh herbs if desired.
