Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms, sliced (any variety, such as button or cremini)
  • 1 cup white wine (use a dry wine for best flavor)
  • 2 tablespoons olive oil (for sautéing)
  • 2 cloves garlic, minced
  • 1 cup chicken broth (low-sodium preferred)
  • Salt and pepper, to taste
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1 tablespoon butter (for finishing the sauce)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
  2. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are tender and lightly browned, about 5 minutes.
  3. Pour in the white wine, scraping the bottom of the skillet to deglaze. Allow the wine to reduce by half, approximately 3-4 minutes.
  4. Pour in the chicken broth and add the thyme. Bring the mixture to a simmer and let it cook for an additional 2-3 minutes.
  5. Place the chicken back in the skillet, spooning the sauce over it. Let it cook for another 2 minutes to heat through.
  6. Stir in the butter until melted and incorporated into the sauce, creating a silky finish.
  7. Serve the chicken hot with the sauce drizzled on top.
