A comforting meal that features juicy chicken cutlets smothered in a creamy, flavorful gravy, perfect for busy weeknights and family gatherings.

Ingredients

  • 2 lbs chicken cutlets or breasts (pounded thin)
  • 4 tbsp olive oil, divided
  • 1/2 stick butter (4 tbsp)
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion granules (or onion powder)
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp dried sage
  • 3 tbsp all-purpose flour
  • 2 cups low sodium chicken stock
  • 6 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 1 stalk celery, diced
  • 1/3 cup sour cream
  • Salt and pepper to taste
  • Buttery potatoes or rice for serving (4 lbs russet potatoes recommended)
  • 1.5 cups half and half (warmed)
  • 1 stick salted butter (softened)
  • 3/4 cup Monterey Jack cheese (shredded)

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Season the chicken with smoked paprika, garlic powder, onion granules, thyme, basil, salt, pepper, cayenne, and sage. Add the chicken to the hot oil and cook for 5 to 6 minutes on each side, until golden brown and cooked through (165°F internal temperature). Remove the chicken and set aside.
  2. In the same skillet, add the remaining 2 tablespoons of olive oil and butter. Once melted, add diced onion, celery, and minced garlic. Sauté until softened (3-4 minutes). Sprinkle flour over the mixture and stir well; cook for another minute.
  3. Gradually whisk in the chicken stock until smooth. Bring to a gentle simmer, stirring frequently until thickened (about 3-4 minutes). Mix in the sour cream, seasoning with salt and pepper to taste.
  4. Return the cooked chicken to the skillet and coat with gravy. Let it simmer for an additional 2-3 minutes.
  5. For mashed potatoes, boil them until fork-tender (15-20 minutes). Drain and mash with half and half, softened butter, garlic powder, salt, and pepper.

Notes

To enhance flavor, swap in your favorite spices or add fresh herbs. Ensure chicken is pounded thin for even cooking.
