A delightful one-pan meal featuring tender chicken, savory spices, and crispy toppings, perfect for busy weeknights or meal prep.

Ingredients

  • 3 cups Cooked Chicken, shredded
  • 1 can (15 ounces) Black Beans, rinsed and drained
  • 1 cup Corn, frozen or canned
  • 1 can (14.5 ounces) Diced Tomatoes, with green chilies
  • 1 packet Taco Seasoning
  • 1 can (10.5 ounces) Cream of Chicken Soup
  • 1 cup Sour Cream
  • 2 cups Shredded Cheese (cheddar or Mexican blend)
  • 2 cups Tortilla Chips, for topping (optional)
  • 2 Green Onions, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the cooked chicken, black beans, corn, diced tomatoes, taco seasoning, cream of chicken soup, and half of the shredded cheese in a large bowl.
  3. Spread the mixture into a greased 9×13-inch baking dish.
  4. Add the remaining cheese on top and optional crushed tortilla chips.
  5. Bake for 30 minutes, or until bubbly and cheese is melted and slightly golden.
  6. Garnish with chopped green onions before serving.

Notes

Use rotisserie chicken for convenience. Add tortilla chips just before serving for extra crunch. Monitor baking to prevent over-browning.
