A simple yet flavorful one-pan roast chicken meal with vegetables and rich gravy, perfect for impressing family or guests.

Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 4 cups mixed vegetables (carrots, potatoes, onions, etc.)
  • 1 cup chicken broth
  • 2 tablespoons flour (for gravy)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and rub it generously with olive oil, then season with salt, pepper, garlic powder, onion powder, and paprika.
  3. Place the seasoned chicken in a roasting pan, surround it with mixed vegetables.
  4. Pour the chicken broth into the bottom of the pan.
  5. Roast for about 1 hour and 15 minutes, ensuring the internal temperature reaches 165°F (75°C).
  6. Remove the chicken from the oven and let it rest for 10-15 minutes.
  7. Whisk the flour into the pan drippings and gradually add more chicken broth until the gravy reaches your desired thickness.
  8. Carve the chicken and serve alongside the roasted vegetables topped with gravy.

Notes

Adjust the vegetables based on what’s in season or what you have on hand. Allowing the chicken to rest is key for keeping it juicy.
