A classic Beef Stroganoff recipe featuring tender strips of beef in a creamy, savory sauce perfect over pasta or rice.

Ingredients

  • 1 pound beef sirloin or tenderloin, sliced into thin strips
  • 8 ounces cremini or button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup sour cream (or Greek yogurt)
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces cooked egg noodles

Instructions

  1. Prepare the noodles by cooking according to package instructions. Drain and set aside.
  2. Sauté the beef in a large skillet with olive oil over medium-high heat for 3-4 minutes until browned. Remove and set aside.
  3. Cook the onion and mushrooms in the same skillet until onions are translucent and mushrooms are browned, about 5-7 minutes. Stir in the garlic and cook for another minute.
  4. Make the sauce by sprinkling flour over the mixture, stirring to combine. Pour in beef broth gradually while stirring. Simmer for 3-5 minutes until thickened.
  5. Combine the beef back into the skillet and stir in sour cream until creamy and heated through. Adjust seasoning if necessary.
  6. Serve the beef stroganoff over cooked egg noodles and enjoy!
