A cozy and comforting soup made with leftover turkey, tender noodles, and fresh vegetables, perfect for chilly days.

Ingredients

  • 2 cups leftover turkey, chopped
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onions, carrots, and celery for about 5 minutes until softened.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the chicken broth and bring to a boil over high heat.
  5. Stir in the chopped turkey, thyme, salt, and pepper. Let simmer for a few minutes.
  6. Add the egg noodles and cook according to package instructions until tender.
