Ingredients

  • 3 ripe bananas
  • 1/2 cup peanut butter
  • 1/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Mash the ripe bananas thoroughly with a fork or potato masher until smooth.
  3. Add peanut butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until fully combined and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Use overripe bananas for maximum sweetness. Avoid overmixing to prevent dense bread.
