Ingredients

  • 2 cans of white beans, drained and rinsed
  • 1 can diced green chiles
  • 1 lb cooked chicken breast, shredded
  • 1 cup corn (frozen or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic. Sauté for about 3-4 minutes until softened.
  2. Combine main ingredients: Stir in shredded chicken, white beans, diced green chiles, and corn. Mix well.
  3. Add liquid and spices: Pour in chicken broth, then add cumin, chili powder, salt, and pepper. Stir to combine.
  4. Bring to a boil: Increase heat to high until boiling, then reduce to low.
  5. Simmer: Let simmer uncovered for about 20-30 minutes, stirring occasionally.
