A flavorful and easy-to-prepare dish featuring chicken marinated in a spiced yogurt blend, perfect for grilling.

Ingredients

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1 cup full-fat Greek yogurt
  • 1/4 cup harissa paste
  • 3 tbsp olive oil
  • 1/2 lemon (zest and juice)
  • 3 cloves garlic (grated)
  • 2 tsp ground cumin
  • 2 tsp turmeric
  • 2 tsp smoked paprika
  • 1 tbsp kosher salt
  • Freshly cracked black pepper (to taste)

Instructions

  1. Prepare the Marinade: In a medium bowl, mix together the Greek yogurt, olive oil, harissa paste, lemon zest, lemon juice, grated garlic, cumin, turmeric, smoked paprika, salt, and pepper until well combined.
  2. Marinate the Chicken: Cut the chicken into large pieces if using skewers, add to marinade, and toss to coat. Cover and refrigerate for at least 3 hours or up to 25 hours.
  3. Preheat the Grill: When ready to cook, remove the chicken from the marinade and thread onto skewers if using, without overcrowding.
  4. Grill the Chicken: Preheat a grill or grill pan over medium-high heat, lightly brush with oil, and grill the chicken for about 13 to 15 minutes, turning occasionally.
  5. Serve: Transfer the kebabs to a platter, season lightly with salt if desired, and serve warm.

Notes

Marinate longer for best flavor, and avoid overcrowding on skewers for even cooking.
